The Serrano is a classic Mexican Capsicum annuum heirloom originating from the mountainous regions of Puebla and Hidalgo, Mexico. Its name literally means “from the mountains” (sierra). Similar in appearance to a Jalapeño but smaller and noticeably hotter, the Serrano is prized for its crisp texture, fresh flavour, and reliable heat.

Pods are slender, cylindrical, and bullet-shaped, typically growing 5–10 cm long. They are most commonly harvested glossy green but will ripen to a brilliant red if left on the plant. Unlike Jalapeños, Serranos have thinner walls and skin, giving them a crisp snappy bite and making them ideal for fresh use without roasting or peeling.

Heat levels commonly range between 10,000 and 23,000 Scoville Heat Units, delivering a bright clean burn that is sharper and more consistent than many modern Jalapeño varieties. The flavour profile is fresh, grassy, citrusy, and highly aromatic.

Due to their clean flavour and thin walls, Serranos are especially popular in pico de gallo, guacamole, salsa verde, pickled chilli mixes, marinades, Mexican cuisine, and fresh raw salsas where a crisp bright heat is desired.
